Lavandula angustifolia Arctic Snow also looks great against a dark background like a Yew hedge. Being an English lavender, this variety is pretty hardy in all but the worst winters and it is good in most soils other than very wet - if in doubt about slightly wet soil you can plant on a little ridge of soil so that the rain can run away from the roots. All Lavenders should be trimmed after flowering (late August) so that they have time to develop new grey foliage to cover the cut stems in frothy new lesves which will give them an attractive appearance throughout winter. Alternatively you can leave the flower stems in place which will be appreciated by birds in winter but that does tend to give you a slightly woodier plant in spring/summer.
